Oat Base

Ingredients

  • 40 g rolled oats
  • 5 g chia seeds
  • 120 g unsweetened almond milk
  • 40 g skyr
  • 80 g apple, peeled and finely diced
  • 5 g honey
  • 1 g cinnamon

Instructions

  1. Combine the rolled oats, chia seeds, and cinnamon in a bowl.
  2. Add the almond milk, apple, skyr, and honey.
  3. Stir thoroughly until evenly combined.
  4. Let the mixture rest for about 30 minutes until thick and spoonable.

Apple Layer

Ingredients

  • 120 g apple, peeled and diced
  • 10 g water
  • 5 g honey
  • 1 g cinnamon
  • 3 g lemon juice
  • 0.5 g salt

Instructions

  1. Add the apple and water to a small saucepan over medium heat.
  2. Cook for about 6 minutes until the apple is tender but still holds its shape. Add a little more water if needed.
  3. Stir in the honey, cinnamon, and salt until evenly coated.
  4. Remove from the heat, add the lemon juice, and let cool completely.

Cinnamon Vanilla Skyr Cream

Ingredients

  • 100 g skyr
  • 15 g milk
  • 1 tsp vanilla extract
  • 1 g cinnamon

Instructions

  1. Combine the skyr, milk, vanilla extract, and cinnamon until completely smooth.
  2. Let the mixture rest for about 10 minutes.

Oat Crumble

Ingredients

  • 20 g rolled oats
  • 6 g butter
  • 6 g brown sugar
  • 0.5 g cinnamon
  • 0.3 g salt

Instructions

  1. Preheat the oven to 170 °C / 340 °F.
  2. Melt the butter.
  3. Combine the rolled oats, brown sugar, cinnamon, and salt.
  4. Pour in the melted butter and mix until all of the oats are evenly coated.
  5. Spread the mixture onto a baking tray lined with baking paper, pressing it together lightly.
  6. Bake for about 12 minutes until golden brown and crisp.
  7. Cool completely before breaking it into small crunchy pieces.

Assembly

  1. Spoon half of the oat base into your serving glass.
  2. Add half of the cinnamon vanilla skyr cream.
  3. Add all of the apple layer.
  4. Repeat with the remaining oat base and skyr cream.
  5. Finish with the oat crumble.
  6. Refrigerate for at least 6 hours. The texture is best after about 12 hours.
