One pizza serves four people and requires one 23 cm × 33 cm pan. For scaling purposes, one recipe unit equals one whole pizza.
Ingredients
- 300 g bread flour
- 25 g water
- 3 g black food coloring
- 5 g fine sea salt
- 3 g instant yeast
- 10 g extra virgin olive oil
- 400 g canned whole peeled tomatoes
- 1 garlic clove (4 g)
- 3 g fine sea salt
- 1 tsp dried oregano (1 g)
- 1 tsp extra virgin olive oil (5 g)
- 150 g low moisture mozzarella, grated
- 100 g mild cheddar, grated
- 50 g low moisture mozzarella
- 70 g pepperoni or salami
- 100 g small button mushrooms
- 1 black olive (4 g)
- 2 tbsp extra virgin olive oil (28 g)
Instructions
- Combine the water and instant yeast. Add the bread flour and black food coloring. Mix until no dry flour remains and a very soft dough forms. Cover and rest for 20 minutes.
- Add the salt and olive oil. Knead for about 8 minutes, until smooth, elastic, and stretchy. The dough should remain soft and slightly sticky.
- Cover and let rise at room temperature for about 2 hours, until noticeably expanded and airy.
- Coat a 23 cm × 33 cm metal pan with 2 tbsp olive oil, including the bottom and sides. Transfer the dough to the pan and turn it once to lightly coat both sides with oil.
- Gently stretch the dough toward the corners with your fingertips. If it springs back, let it rest for 15 minutes before stretching again.
- Cover and let rise in the pan for about 30 minutes. The dough should relax into the corners and become visibly puffy.
- Preheat the oven to 250 °C / 482 °F with a rack positioned on the second level from the bottom.
- Cut triangular eyes and mouths into the pepperoni or salami slices to create small jack o lantern faces.
- Cut the mushrooms vertically through the cap and stem. Cut two small eye sockets into each cap, then make several shallow vertical cuts in the stems to resemble skull teeth.
- Crush the tomatoes by hand, keeping some texture. Mix with the grated garlic, salt, oregano, and olive oil. If the tomatoes contain a large amount of thin liquid, leave some of the excess liquid behind so the sauce holds its shape on the pizza.
- Cut the 50 g mozzarella into slices about 5 mm thick. Use a small ghost shaped cutter to cut out four mozzarella ghosts. Cut tiny pieces from the black olive for the eyes.
- Scatter most of the cheddar around the perimeter of the dough, making sure the cheese touches the metal sides of the pan. Scatter the remaining cheddar across the center.
- Distribute the grated mozzarella evenly across the pizza, working gently so the risen dough stays airy.
- Spoon the tomato sauce over the cheese in several wide diagonal waves, leaving plenty of cheese exposed between them.
- Arrange the mushroom skulls and pepperoni faces across the pizza.
- Bake at 250 °C / 482 °F for about 15 minutes, until the bottom is deeply browned and crisp and the cheese around the sides has formed a dark caramelized crust.
- Add the mozzarella ghosts and their black olive eyes. Return to the oven for about 2 minutes, just until the mozzarella softens and attaches to the pizza while the ghost shapes remain visible.
- Run a thin metal spatula or knife carefully around the sides of the pan to release the caramelized cheese crust.
- Lift the pizza from the pan, slice, and serve while the bottom and cheese edges are still crisp.
Tips & More Info
Black food coloring can vary
For one 23 cm × 33 cm pan, use about 3 g black powder coloring, 4 g black gel coloring, or 8 g black liquid coloring. Add powder coloring directly to the flour. Mix gel or liquid coloring into the water before adding it to the dough. Concentration varies between brands, so adjust slightly if needed to achieve a deep black color.
Why does Detroit style pizza need cheese against the pan?
Cheese touching the hot metal releases fat and moisture as it melts, then gradually browns into the crisp caramelized edge that defines Detroit style pizza. Cheddar works especially well around the perimeter because it browns readily and brings more flavor than mozzarella alone.
Keep the sauce thick enough to hold the pattern
Whole canned tomatoes vary significantly in how much liquid they contain. Leaving behind some of the watery tomato juice keeps the diagonal waves visible and prevents excess moisture from soaking into the cheese and dough.
Do not flatten the dough after its final rise
The small pockets of gas created during proofing are what give the finished crust its light interior. Pressing firmly while adding the cheese can push that gas out and leave the center noticeably denser.
A metal pan makes a major difference
Metal transfers heat into the oil and dough quickly, helping the bottom fry and crisp as the pizza bakes. Glass and ceramic heat more slowly and usually produce a softer, paler bottom.
Why use mozzarella and cheddar together?
Mozzarella provides the familiar stretch and mild dairy flavor across the surface. Cheddar brings stronger browning and a richer flavor, making it especially useful around the perimeter where the crispy cheese crust forms.
Add the mozzarella ghosts near the end
Mozzarella softens quickly at high temperatures. Baking the ghosts for the entire cooking time would cause them to spread and lose their recognizable shape, while a short final bake lets them soften without completely disappearing.
Watch the bottom as closely as the top
A common mistake with pan pizza is judging doneness only by the melted cheese. The crust should have enough time for the oil and hot metal to create a deeply browned, crisp underside, otherwise the pizza can look finished while remaining soft underneath.
