Ingredients
- 2 slices sourdough bread
- 10 g butter
- 5 g neutral oil
- 0.5 ripe avocado (about 70 g)
- 5 g lemon juice
- 1 g salt
- 0.5 g black pepper
- 2 fresh eggs
- fresh chives
Instructions
- Cut heart shapes out of the sourdough slices, heat a pan over medium heat, add butter and neutral oil, and toast the bread hearts until golden and crisp on both sides.
- Cut the avocado in half, remove the pit, score the flesh and scoop it out, then cut into small cubes. Mash the cubes with salt, black pepper, and lemon juice until smooth but still slightly textured.
- Crack the eggs individually into a fine sieve to drain excess whites, then transfer each egg into a small bowl.
- Bring a pot of water to a gentle simmer, carefully slide the eggs into the water and poach for about 3 minutes until the whites are set and the yolks remain soft.
- Assemble by placing two toasted bread hearts on a plate, spreading the avocado mash from half of the avocado on each slice, topping each with a poached egg, and finishing with finely chopped fresh chives on top.
