Tips & More Info

Why let the oat base rest before assembling?
Resting gives the oats and chia seeds time to absorb liquid and naturally thicken. This creates a spoonable, almost pudding like texture that feels structured instead of loose or watery.

Why balance oats with chia seeds instead of relying only on oats?
Chia seeds absorb liquid much more aggressively than oats, which helps tighten the texture and give the base a naturally spoonable structure. This prevents the mixture from feeling loose after chilling and creates a more stable layered dessert.

Why soften Biscoff spread before mixing?
Warming the spread slightly makes it more fluid and easier to emulsify with the skyr base. This ensures the flavor distributes evenly, creating a smooth caramel spice profile instead of streaks of thick paste.

How does resting time change everything?
Overnight chilling allows oats and chia seeds to fully hydrate while also letting the Biscoff flavor settle into the cream. The result is a unified texture where each layer still exists but blends harmoniously when eaten.

How to make it higher in protein?
You can increase skyr and slightly reduce Biscoff spread to shift the balance toward protein without losing structure. Adding a small scoop of neutral whey protein to the cream layer also works well, as skyr helps maintain thickness.
